Jozu was fighting on par with Aokiji, who is probably equal to power, and ability, with Toshiro, who is a Captain. Ikkaku is strong, but not equal with a Captain. Besides, Jozu isn't the kind of person to allow Ikkau an opening where he isn't in the vicinity of another Soul Reaper - Jozu would just fight him and beat the crap out of him... Ikkaku might not even get the chance to use Bankai - especially if Yuimichika or Kenpachi is close by.
