Because Edward had been a vampire for almost 100 years, and he was immune to the human blood, because he had drank so much animal blood. that's the way I understood it from Breaking Dawn, that newborn 뱀파이어 eyes are red, and then, as they have 더 많이 control and don't consume human blood, their eyes turn that topaz color. that's why Bella had to wear contacts after she was changed when she was around humans.

Remember when Bellas eyes were bright red when she was first changed and Edward said that drinking animal blood would dull the color over time...So I'm guessing that he would probably have to drink alot of human blood over a span of time to make his eye color brighten up to red.
