Neither really. I think mocking love at first sight in Disney Princess movies is just silly and annoying, because they're fairy tales! They aren't supposed to be realistic, although they may bring an important moral or a scathing critic on behavior/society.

Yeah, it really depends. In some cases, the pair spends every SECOND with each other and when you are never separated from somebody for that long, you can get to know A LOT about them and you're likely to form feelings for them, be it good or bad.

TBH I don't get it. In the 90s and 2000s they had more developed relationships that had moved on from that "love at first sight" cliche without needing to make a big song and dance about it.

^they really didn't. They were full of "odd couples who hate each other and were forced to spend a day together till they suddenly fell in love" relationships, some really lacking the chemistry too. And BatB, TLM, Aladdin, Pocahontas, PatF, etc all had love songs to explain to the audience how the characters felt. It's not that deep. Sometimes romance is just supposed to be sweet, not overanalyzed through a modern cynical lens. And some like Mulan and Shang didn't even need the ship teasing at ALL but did anyway.

Anyhow. It's annoying and one of the many nonsensical, hypocritical points Frozen makes. In addition to the fact that the trolls gave terrible advice before- why should they be any more knowledgeable about this?
